Salads and Pie

I would consider tonight my first real shift-shift. I kept up okay, didn’t screw up very badly, and even managed to earn a few compliments from the front of the house regarding the presentation of some plates. I know this isn’t a lot to brag about considering I’m making salads, but it would be a lie if I told you that I didn’t swell with pride when someone told me, “looks good, Roman.” That type of feedback is very important to me; I don’t think I’m alone in that. Don’t you all feel so much better about your job when someone tells you that you’re doing it well and recognizes your effort?

Cleaning my station at the end of the night was a chore. I still haven’t gotten the hang of it, and while everyone else was sweeping and mopping, I was still breaking down my mise-en-place and preparing it for the morning shift. In time I know I’ll get speedier.

I get the sense from my higher-ups that soon I’ll be making the desserts…that will be pretty rad, considering I’ve not done much baking.

Highlight of the night: telling the front-of-house expediter that we had two peach cobblers left. “Do you think you can sell two cobblers?” Followed by a round of announcements among the servers that there were two cobblers to go. Within twenty minutes both were sold. I don’t think I’ve ever participated in that kind of teamwork before. It was exhilarating.
