Small cuts and scrapes

In the second blog post of a short series about my new adventures in the restaurant world, I’d like to share with you, dear reader, the satisfaction that comes with earning new calluses.

I got a little soft over the past few years. My hands were beat to shit in the first few weeks of dishwashing, but now I am getting back to where I used to be. The extremes of hot and cold are not as bothersome anymore, nor is being on my feet all day.

Good news today: I am making a smooth transition from dishwasher to garde manger and every shift I am assigned more and more food prep tasks and wash fewer dishes. One grill cook is leaving and my hope is that one of the other garde manger cooks will be bumped up so that there is room for me on the salad station. A garde manger deals mostly with salads and plating desserts.

If this happens, it will be a significant step for me. Many of you know how disappointed I was when I was unable to move up the line at the restaurant I worked for in Boston. We will see what happens…

  1. Congrats! I’ve never even hear of the word ‘garde’ so I was automatically impressed. Hope all is well – hopefully we can meet up late August for his 30th, no?
